Extra virgin olive oil - early harvest

It is produced from early season olives, in October, while the fruit is still "unripe." The olives, with a low oil content but rich in aroma, are harvested before they fall to the ground and then immediately cold-pressed. The resulting olive oil is rich in antioxidants and various vitamins, while also being distinguished by its bitter and pronounced taste.
